Add the minced onion to the pot. Let it simmer for a few moments, then stir intermittently with a wooden spoon.

The onion will release enough moisture to de-glaze the pan. Use downward pressure when stirring to scrape off the fond.

Use a garlic press to add your desired amount of garlic. Stir until it smells so good other people begin making comments (about 1-2 minutes).
