@aichabl try a headset and see if that works better. If so, then the issue is with your microphone. It is possible that there is some debris in the Mic opening or that this is a bad microphone.

The main Mic is on the sub-board, so you may need to change that board or purchase a new Mic to replace yours.

Since iFixit does not yet have a guide for this, use something like this video to work on your phone.

While you work on your phone, take lots of pictures. Once you are done with it, take those pictures and create a guide for iFixit.
