Formatting Sierra on new SSD

I have been trying to update this Mac Desktop Tower with an SSD. Whats happening is the drive will only allow for short cut keys when the old drive is attached along with the new drive. The time machine backup failed and I am no longer able to access the desktop via the old mechanical drive. When I press any short key like recovery mode (command option + R) I erase the drive and format Mac Journal Extended > Reinstall Mac OS Sierra > it gets to where its going to finish and it gets stuck on negative seconds remaining. I am using a Accelsior S so the drive can reach its full potential in the older system. Ive also added some pictures to show the error I get in the logs Error 1080.
So here's my question. Why can't I access recovery tools when only the new SSD is connected?
Am I getting an error because its an external drive with both drives connected?
Is there a fix for this that someone is aware of?

Here is a picture of the log when installing High Sierra. I believe the system came with High Sierra or Sierra. El Capitan fails after copying user files. It’s not letting me create a Sierra bootable drive for some reason.

Yes it’s plugged into the adapter. I’ll have to see about saving to pdf.
