You may just have to carefully open it and disconnect the battery as soon as it is accessible.
As long as you can avoid operating the buttons and touching the systemboard with metal tools etc (or fingers), i.e. shorting out components, until the battery is disconnected then it should be OK since the touch is not working anyway.
With most devices these days the power button is not a power isolating button anyway. It merely provides an earth when pressed to signal to turn on/off the device
There is always power at various points on the systemboard even when the device is off. It is merely in an extremely low power state, just enough to maintain the settings and waiting to be started.

Try connecting a USB mouse via a OTG cable -example only and use it to navigate through the tablet. Not sure if it will work to shut down but should be good enough to allow a backup just in case

Have you tried just holding the power button operated to see if it force shuts down the tablet?

Thanks for your response. Yes, I have tried that but it just pops up an option to shutdown via touchscreen and if I continue to hold it, the screen goes to sleep. I held it for about a minute.
