Haven't even tried opening these new thin models yet (we only have two, thank god).

This is what I found in EveryMac's memory guide for this newer thin models:

"All of these 21.5-Inch and 27-Inch models with upgradable memory support 204-pin 1600 MHz PC3-12800 DDR3 SDRAM SO-DIMMs, but the 21.5-Inch models only support 16 GB (8 GB in each of the two slots) whereas the 27-Inch models support 32 GB (8 GB in each of the four slots). At the moment, both the official and unofficial maximum RAM capacities are the same."

So the Corsair CMSX16GX3M2B1600C9 appear to meet the specs.

Seems right 1600 MHz DDR3 SDRAM (is not intended to be upgraded after purchase) looks like you'll be in for a challenge - remember to make a guide -.
