By tightening or loosening the screw on the outside of the string you can adjust the cylinders on the bridge called bridge saddles to be closer or farther.
Think of adjusting the bridge saddles as adjusting the action on the other end of the guitar, which is useful to be able to do, due to their proximity to the pickups.
