How to remove screen

On your phone there are two ways to replace the screen. The first, and recommended, way is to purchase the screen already mounted on the midframe. Replacement basically consists of gutting the phone; removing all of the internal components and transferring them to the new screen+frame assembly. If you buy a replacement screen from Samsung, this is the method you will use, as they don't sell the screen by itself. The advantages are that you get a new midframe, so if yours is scratched or bent, it'll be back to new condition, plus it will be much more water resistant than a screen you glue on yourself. The downside is there are more parts to remove, but fortunately Samsung makes the process pretty easy; an order of magnitude simpler than the same job would be on an iPhone. Sorry to say iFixit doesn't have a guide to that repair for you, but this video guide from the French site SOSav has everything you need to know to pull off the repair. It is, as you might guess, in French, but I found that the subtitles came up in English for me when I played it.

The other way to replace the screen with an aftermarket display is to only remove enough components to access the display connector, then separate the old OLED display from the frame, clean off all the old adhesive and glue a new screen on the frame. It took a bit of searching, but I found a YouTube video showing that process.

One criticism I might make of this video is that I don't see any reason to remove the motherboard and daughter card if you're doing a screen only replacement, but it won't hurt anything; just seems like extra work for nothing. All you really need to do is unplug the display connector from the daughter card once you have the rear cover and rear frame off (after disconnecting the battery, of course).

The screen without frame is going to be marginally cheaper; in my experience there isn't a big price difference and you may make up that difference by having to buy glue like B7000. If you're not experienced with phone repairs, the screen+frame method is definitely better, but of course it's entirely up to you.
