Looks like mostly opening the thing like one was changing the fan or hard drive to get at the CMOS battery, but what should one get for a replacement?

The fan replacement guide has a decent picture of the CMOS battery; here I've cropped it down the just the battery.
It has the battery specifications written right on it; the text CR2032 tells you exactly what the battery is; it's 20 mm wide and 3.2 mm thick. Those button cell batteries are readily available at most stores, but the problem is in your laptop they've wrapped it in plastic and connected a couple of wires and a plug to it. An online search for "Asus Eee PC 1201N cmos battery replacement" brings up several results; here's one that specifically mentions your particular model number, but there are many more choices available.
