How does controller function when Bluetooth is turned off?

Bluetooth can be turned off by going into settings and selecting to communicate through usb cable. Does this work for all ps5 controller versions? Also how is Bluetooth turned off, is there a switch on the console itself that turns off? Is the controller using any Bluetooth when connected to usb cable? Is there a way to test to make sure no Bluetooth is being used during this time? If Bluetooth is off then why does the controller light turn on for a few seconds when pressing the PS button on the controller? Are 3rd party PS controller allowed to be used?
