Hello. Does anyone here know whether it's possible to change the SSD in a Lenovo ThinkPad T470p (upgrade from 256 GB to 1 TB)? I only saw guides for the T470 and T470s.

Here's the hardware maintenance manual for the laptop.
Go to the bottom of p.66 (72 of 106 pdf) in the manual, to view the procedure to replace the SATA storage drive.
The M.2 SSD removal procedure follows on p.68 (74 of 106 pdf)

Yes, you can upgrade the SSD in a Lenovo ThinkPad T470p from 256 GB to 1 TB. The T470p supports an M.2 NVMe PCIe SSD and a 2.5-inch SATA drive, so you can replace the existing SSD or add a second one, depending on your current configuration. To upgrade, power off the laptop, remove the bottom cover, disconnect the battery, and replace the existing SSD with your new one.
