Would it be possible to replace an iPad 2 display with a retina display for the iPad 3?.

In short, no. The iPad 3 has a completely different connector on the logic board and it is located in a different place. There are also firmware incompatibilities that wouldn't allow you to do it. The iPad 2 isn't meant to drive such a high resolution.
