Hi Joe,
Modern phones have screens that are made up of several parts, including a front glass layer, a digitizer (touch screen) layer, and a display (OLED) layer. These pieces of glass and/or plastic are all bonded together with OCA, or Optically Clear Adhesive and usually include some electronic circuits as well.
In theory, it is possible to separate the layers and replace, for instance, the front glass, but in practice it's usually not cost effective. To do it correctly you need a vacuum table to hold the screen down, wire guides for use in slicing the adhesive between the layers of glass, a bottle of OCA, then a vacuum chamber to remove air bubbles and finally a UV curing chamber to dry the glue.
The upshot is that for a DIY repair, no one tries to actually repair a screen when it's far cheaper and easier to just replace the whole thing. Fortunately, you can get everything you need right here on iFixit! Here's the replacement screen for your phone.
Google Pixel 7 Pro Screen - Genuine
I might note here that iFixit has an agreement with Google to sell parts for their phones, so this is actually a genuine Google part made specifically for your phone, and it comes with a lifetime warranty. If you're somewhat new to phone repairs, I would strongly suggest the Fix Kit version, as it has all the tools and adhesives needed to do the job right. For $7 USD extra it's a great deal.
And of course you'll want step by step instructions on how to replace that screen, and iFixit has you covered there as well.

Hopefully that's everything you need to know, so good luck with your repair and be sure to come on back and let us know how it all turns out!

Is it possible to get the info off a sim card add it to my new phone and then have that info stay on the new phone after I put the new sim card back into the new phone? I want to get the info off of that old sim.

@joe4790 SIM cards haven't held data from the phone in 20 years. Nowadays you generally back up your phone to a cloud server then restore it to your new phone. That way everything gets transferred; all your apps and their data, your contacts, photos and documents. Done correctly, your new phone should work exactly like your old one did and have all the same information. If you buy a new phone from a service provider, they are usually more than happy to help you transfer everything.
In addition, the whole process doesn't affect what's on the original phone at all, so everything will still be there as well.
