I was thinking of maybe buying a base-model M2 Mac Mini solely for the purpose of making it transparent. Would this be possible though? Also, what would I have to order to make this happen.

While one could CNC a block of clear acrylic emulating the case, you shouldn’t run the system that way as the metal case suppresses the EMI noise which can effect other radio signals like Bluetooth,WiFi, TV over the air and cellphone service. While you might not be bothered your neighbors might.
