Thank you Mark for putting up the info pointing the way to the microphone.
Removing the rubber cover off didn't work for me but instead i replaced my microphone. If you like to tinker or know a tinkerer, you will need to replace the microphone that's soldered onto the board just as "MarkEwick" has said/displayed above. I replaced my microphone on my Eufy Doorbell with this following microphone:

It now works like new again. It is surface mounted so tools needed ideally would be use of a hot air gun and some solder paste. (You probably could do it with just plain solder and a soldering iron but i took the more delicate approach). Took me roughly 20 minutes from start to finish/test.
I also came across another thread on here that almost shows you how to disassemble right down to where the microphone is and is useful.
(Eufy Video Doorbell 2k (Battery-Powered) Teardown - iFixit), after Step 6 you'll need to remove the remaining screws that hold the circuit board down / IR camera down and flip it to get to the microphone as pictured in Marks
