I originally just wanted to open up my bottom case to check for dust bunnies and tighten up some loose screws
My CPU fan stopped spinning up and when booting into Windows I checked hwinfo to check my temps because it seemed warm, I was peaking at 95⁰C (red)!
Did I accidentally disconnect something from the fan?

If this is the same laptop that has the bent chassis, then perhaps the fan has become disconnected from the motherboard due to that problem.
Here's the hardware maintenance manual for the laptop.
Go to p.46 to view the procedure to remove the fan. This will allow you to check the fan cable connection and also ascertain the problem with the chassis.
It may be a good idea to add more images in your other question showing what has happened to the chassis. Initially it looks like the hinges may have come loose but the image doesn't show it too well. Here's how to add images to an existing question on ifixit Adding images to an existing question
