I have 500e 2nd gen chromebook and I am wondering if it is possible to actually upgrade and replace the existing storage

The short answer is no.

The storage is eMMC flash memory and it is hard mounted on the system board and considered not to be upgradeable.

An option to consider is to insert the largest capacity SD card that you can afford or want, in the laptop's card reader slot and leave it there and use that as additional storage.
