Have a Keurig 2.0 K400, water temp not as hot as it could be. Is there a thermostat for the water temp?

The brewer is one of the older units (not the plus series) the temp is not adjustable, would it be worth repairing?

I would at least try. Let's see if we can find the thermostat for it. You did descale the Keurig to make sure that this is not what is impeding the temp.
