I was curious instead of doing 1TB of SSD can you do 2TB instead? Is it possible? Will there be a lack of performance?

You can absolutely use 2Tb on this laptop. I replaced the stock SSD with a 1Tb Samsung 970 EVO and a few months later went with a 2Tb Samsung 970 EVO Plus. It works great. If you go with Samsung then get the EVO PLUS model. For a few extra dollars you get a significant performance increase.
