Whenever I try to read a book, Nook book opens and appears to work fine. Every two or three minutes the screen reverts back to main screen. Super annoying. Any help would be greatly appreciated.

I am not too familiar with your tablet, however, I have had this issue on my iPad before. I finally found out that the app was the issue and had to delete the app and re-download it.
You might give that a try and see if it corrects the issue.
