Using DDR3 PC3-10600 rather than DDR3 PC3-8500

Has anyone tried putting in the larger DDR3 PC3-10600 ram into the mac mini mid 2010 rather than the recommended DDR3 PC3-8500.

Sure the faster (newer) modules will work. But you don't gain anything as the systems memory access speed is fixed.
I would just buy the cheaper modules. Also remember the systems limit is 16 GB.
Before you do anything make sure your firmware is upto date. Follow this Apple T/N: EFI and SMC firmware updates for Intel-based Macs.

I have run into some machines where the faster RAM DDR3 PC3-10600 would not work in a DDR3 PC3-8500 native machine. I know it should but it didn't. This was last seen in a 2010 15" MBP.

I wonder if Apple have a software hack to stop it...
Same here, put 10600s into MM 2010, three beeps only. Will not run.
@chrishees - Check the PCH logic as the older series won't support the newer SO-DIMM's.
