Some older apps may not run under the newer macOS releases so they may need updating or replacing. Review your current usage and if the systems processing power, RAM & Storage meet your needs for many it does.
But to answer your question you can gut the system and place within it a new interface board to reuse the LCD. Converting it into a display only.
