Regain Bluetooth functionality by replacing your Bluetooth board.

Lay the iMac display-side down on a flat surface.

Loosen the three Phillips screws securing the rear panel to the iMac.

Lift the rear panel slightly from the bottom edge of the iMac.

Pull the rear panel toward yourself and remove it from the iMac.

Remove the two 5.5 mm T6 Torx screws securing the Bluetooth board to the logic board.

Bend a paper clip into a hook and use it to pull the Bluetooth board up off its socket on the logic board.

Use a spudger to pry the Bluetooth antenna connector up off the Bluetooth board.

WARNING: The last iMac G5 17" ALS (no isight) to be made does NOT have a dedicated bluetooth board.
I followed this guide and ended up removing the fax/data modem which is above the bluetooth board in this guide.
The last iMac G5's (17" no isight) to be made have a Airport Extreme/Bluetooth combo board:
