Why can't I up grade to a 12th Gen i9?

I am wondering what stops me from upgrading to a 12 Gen i9? Like the i9-12900KS.

What is the best CPU I am able to use?

The configurable options include the following.

3.8GHz 8‑core 10th-generation Intel Core i7

3.6GHz 10-core 10th-generation Intel Core i9 (I9-10910, to be specific)

Those are the highest end processors your iMac supports. There may be other LGA 1700 processors that are physically and electrically compatible, but anything other than what it could be configured for is a major crapshoot, since processors require BIOS support and there likely won't be any for an unsupported CPU.
