A Composite (AV) video signal is two signals combined.
There's a Luminance component and a Chrominance component to the signal.
It is the Chrominance component that provides the necessary colour information. The Luminance component provides the brightness information.
Looking at a [link|https://wiki.console5.com/tw/images/a/a2/N64_NUS-CPU-03.pdf|schematic] of the N64, there's an encoder (U5) used to combine the signals coming from the CPU, (RCP-NUS) to provide the different signalling output types e.g. s-video and AV.

Can you try the s-video output and check if that works OK?
