Looking at the schematic in both the [document|40749|mini manual] and the [document|40750|technical service guide] for the model (see p.51) it is a test jack, that appears to be associated with the ice maker and the ice maker water inlet valve. The wire colours shown in the schematic and in the image you posted are the same anyway.
There's no other mention of it in either the mini manual, the service manual or in the [link|https://www.manualslib.com/manual/740390/Ge-Electronic-Icemaker.html#manual|GE Electronic Icemaker Technical Service Manual] for the model as to how it is used.
Probably best to tie it up out of the way so that it doesn't interfere with anything.
