Looking at the [https://cardiagn.com/vw-golf-mk7-5g1-manual-body-interior/|body interior] section of the repair manual, the battery needs to be disconnected and also a special air bag lockout adapter needs to be fitted to the wiring harness under the seat before commencing to remove the seat. (see p.429 → of the manual)

Also it appears that if there's an airbag indicator light after reinstalling the seat, the error needs to be cleared from the DTC (diagnostic trouble code) memory using a diagnostic tester unit - see p.438 of the manual.

You may have to go to a dealer to get it cleared.
