Changing the touchbar is possible but difficult because it is glued down very strongly. This is not the exact same model, but this guide should give you an idea of what to expect:

The bad news is on the keyboard side. It is riveted in the top case and you will be better off swapping the full top case. Many comments in the video you linked also mention the rivets that are somehow not in the video (rivets were most likely drilled out and replaced with screws prior to the making of the video).
