Why is my door ice maker fluctuating in temperature?

Fridge and freezer temps are correct. No ice build up anywhere. No air leaks anywhere, tested by pouring water down the chute. Water pressure is great, water line not frozen. This is the first real conundrum I’ve faced in years. Could the new ice maker be defective? Could the mainboard be faulty. Faulty wiring? Maybe the door insulation has gone bad?
