Using water to clean the plates while they are still hot can cause them to warp. I don’t know the griddle but if the plates were made from cast iron they would most probably crack if you did this and not warp like steel and aluminium plates will do.

If may have been better to add just a small amount of water and gently clean the plates while they’re still being warmed in the griddle to remove any food that is stuck to the plate, then turn it off and leave it too cool before cleaning it properly.
