If you know your mic is good, and you hear audio fine but the person on the other end hears broken audio, I usually attribute that to bad reception from asymmetrical data signal(basically download speeds are good but upload speeds are bad).
My mother has had a similar issue. She lives in a mountainous area and does not have a clear line of site to the cell tower nearest to her. I used to be able to speak with her fine but recently she would consistently only get 1 sometimes 2 bars on her phone. She could hear me fine but I couldn’t make out anything she said.

+For some reason some of the services like WhatsApp etc seem to be better at handling voice over their systems but there is latency in my mother’s situation.
To solve it, I ordered her a 4G cellular signal booster/amplifier and had someone install it to the roof of her house. Now she gets a consistent 3 bars and I am able to speak with her perfectly.
If you have access to broadband and have a weak signal, you can get a Network extender from your phone carrier as well and hook it up to your broadband router. Given that my mother is in a rural area, she uses satellite for internet so that was not an option for us because the Network Extenders do not work with satellite internet. If you also have satellite internet, you will also want to make sure your phone is not trying to make calls through your satellite router as it suffers from asymmetrical data issues as well.
