It should be mounted on pipe 2, not that I think it matters much as in some refrigerator freezers it is mounted on the evaporator itself.

It looks like pipe 2 is where the refrigerant exits the evaporator unit so it will be ever so slightly warmer than the refrigerant entering at pipe 1 because of any heat absorbed by the refrigerant.
