Jumpy / Lagging Magic Track Pad Issues - RAM Related?

So I just bought a brand new Mac Mini, straight from Apple with only 8GB of RAM and installed a 64GB Samsung kit I found on Amazon. The machine seems to run fine, RAM shows in the system and all, but one issue that recurs and is driving me crazy is that my Magic TrackPad isn’t always fluidly smooth…sometimes it will start to jump when I’m moving the cursor, other times it seems like clicking is impeded. I’ll move my finger to another spot on the trackpad or I’ll power cycle and it will work again fine for 15 minutes, but issues come right back.
I reinstalled the Apple OEM RAM and have been running now for 20-30 minutes without issue…does bad RAM do this? I’ve been out of the Apple repair game now for 12 years, so I’m not as sharp as I once was.
