The thermostat is often not the issue; its contact with the curved bottom is the issue. Air gets between and the switch measures base air temp rather than water temp, which cuts out earlier. I resolved by sanding surface of both the thermostatic snap switch and the bottom of the pot with 600 grit, to remove oxide/dirt then applying some leftover thermal paste from the last time I changed out a CPU chip. viola hot perfect brew!
